San Marzano tomatoes are an indeterminate, high-yielding, heirloom variety originating from the region in Italy of the same name, dating back to the 18th century. They are considered the best of the best for canning, producing sauce and tomato paste because of their balanced flavor that combines sweetness, tomatoey intensity and just the right amount of acid. They have a thick flesh and few seeds.
